European patent languages
The three official languages recognized by EPO are English, French, and German. Accordingly, the safest option is to translate the application documents and the patent itself to one of these languages. They are enough for the patent application to be reviewed and the IP rights to be granted by the agency (presuming other, non-linguistic criteria are met, of course).
After the grant has been issued, however, a number of European countries will still require translations to their local languages in order to validate the patent in their jurisdiction. In other words, after EPO has granted you a patent, you still need to translate parts of it and submit in some of the countries of Europe for these countries to accept it.
Below is a list of these countries together with the part of a patent that needs to be translated, and the language it is ought to be translated to.
